VEGETABLE SALAD

Done with your high carb, high fat foods ? .....want to giv ur intestine a break ?...go for a nice crunchy salad for lunch or dinner..make it sweet or salty or even spicy... Do whatever you enjoy ...

1 cup grated lettuce/cabbage
1/2 cup grated carrots
12 rings onions
12 rings banana peppers
1/4 tsp black pepper
add jaggery or salt
1 tsp vegetable oil
1 tbsp lemon juice
1/4 tsp vinegar
1 tbsp grated parmesan cheese

add all the above in a bowl..toss them..
(get cheese blocks from store, grate them and store in airtight boxes...they add the crunchiness and flavor to ur salad that is missing in the pregrated parmesan)

mix them well..there u go ..a tasty and healthy food rite in front of u ..

TIPS:
this makes a healthy snack/ dinner / lunch... prepare them in advance and refrigerate...eat them when u want to munch sumthing... i bet this is not the tasteless salad u r thinking of :)

chilli parotta

RECIPE FOR CHILLI PAROTTA
always longing to go back to madras to have those yummy kothu parottas...u no longer have to wait..u can hav it in 15 mins if u hav a few things at home
  1. frozen parottas - 3
  2. big onion - 1
  3. tomatoes - 2
  4. green pepper (capsicum)-1
  5. green chillis - 3
  6. ginger garlic paste
  7. dhaniya powder (coriander ) - 2 tbsp
  8. chilli powder - 1 tsp (more or less for ur spice level)
  9. turmeric powder - 1 pinch
  10. eggs -3
  11. curry leaves - 10
  12. salt- 1 tsp
  13. oil - 3 tbsp (for nonstick cookwares)
PREPARATION:
  1. chop onions ,tomatoes ,capsicum and curry leaves.
  2. take frozen parottas out of your freezer and thaw for 3 minutes.
  3. place parotta on cutting board and cut them into nearly squares with a knife.(make length wise strokes and then horizontal cuts)
  4. beat three eggs in a bowl .(Add 1/4 tsp salt )

COOKING DIRECTIONS:

  1. Place cooking pan on medium heat.
  2. add chopped onions and saute until light brown.
  3. add tomatoes ,capsicum and ginger garlic paste.saute for 2 mins.
  4. add the turmeric powder,coriander powder ,salt and chilli powder .
  5. mix the pan contents well for a minute.
  6. add the parottas
  7. then add the beaten eggs
  8. keep mixing them well until the stickiness is gone and eggs are cooked.
garnish with cilantro leaves and serve with raita or korma.
